Buffalo Chicken Lollies with blue cheese dip

1/2 c cayenne hot sauce
2 tbsp each ketchup honey butter
simmer 20 minutes

1 celery stalk, clove of garlic, and shallot
2 tbsp celery leaves
1/2 tsp salt
1/4 tsp pepper
pulse in food processor
add 1 1/2 lbs ground
refrigerate for at least 30 minutes

form 2 tbsp rounds
attach skewers
firm up in refrigerator for 20 minutes

1/2 c mayo
1/4 c buttermilk
1/2 fresh lemon juice
2 oz bleu cheese
salt & pepper
blend together
add remaining bleu cheese to garnish

grill 2 minutes then flip grill 5 more minutes
